The main ingredients are automatically weighed and conveyed into kneading machine after adequacy cycles run by robots. The operator controls the computer with a screen placed beside each mixer.

Small ingredients such as salt, yeast, tomato powder, vanilla, etc.. Are weighed and added manually during the knead "dough". Main ingredients per day:
Flour 70 tons (or 3 tankers) Sugar about 8 tons and Fat
about 20 tons.

A military fort place under the train station of Saint-Lazare. There's still some germans signs on the wall, describing the use of a ventilation machine.
